Tandoori is one of those flavours that most people like, it isn’t too spicy and has a great flavour.  Add this to a pizza, chicken, beef, or fish and you have a dish made in heaven… well we think so anyway!

You will need one batch of tandoori paste and also one batch of our pizza dough, so make sure to have these handy before starting.  You can make both of these in advance and freeze them.  Both the marinade and pizza bases will freeze for a good few months.

Ingredients

  • one batch of pizza dough
  • one batch of tandoori paste
  • 1 tbsp. tomato paste
  • 2 chicken breast
  • capsicum
  • handfuls baby spinach
  • 1/4 red onion
  • 1 c freshly grated cheese
  • 1/4 c plain yoghurt

Instructions

  1. Coat chicken in the tandoori paste, cover, and refrigerate for at least 1 hour (if time permits).
  2. Preheat oven to 200ºC and line a pizza tray with baking paper.
  3. Roll out pizza dough and place on oven tray. Spread base with tomato paste.
  4. Top with marinated chicken, capsicum, spinach, onion and cheese.
  5. Cook for 12-15 minutes until golden and the base is crisp.
  6. Once cooked drizzle the yoghurt over the pizza.
