I wanted something a little different and had some turkey mince to use up. I’d seen some stuffed capsicums in a magazine I was flicking through and thought I’d try to make some myself, using the turkey mince. I made them up as I went, and they turned out awesome, we all loved them!

Ingredients

  • 1 brown onion
  • 2 garlic clove
  • 2 tbsp. mexican spice mix
  • 1 zucchini
  • 6 button mushroom
  • 500 g turkey mince
  • 1/2 c chicken bone broth powder (or stock liquid)
  • 1 c cooked rice (brown or white)
  • 1 400g tin kidney beans
  • 4 capsicum
  • 1 1/2 c freshly grated cheese

Instructions

Thermal Cooking Method

  1. Peel and half the onion, and peel garlic. Add these to your mixing bowl and chop for 5 second/speed 5. Tip into frying pan.
  2. Add zucchini and mushrooms, chop for 5 seconds/speed 5.
  3. Add olive oil to your frying pan (onion) and cook on medium/high heat until wilted. Add chopped veggies and turkey mince, and cook until cooked through.
  4. Add all other ingredients and stir to combine. Let this simmer over medium heat until the liquid has reduced and the mixture has thickened. Pre-heat oven to 180C while this is happening.
  5. In an oven proof dish place your halved capsicums - seeds removed. Grate the cheese and place to the side.
  6. Once your mince mixture is ready, fill the halved capsicum with the mixture and top evenly with cheese.
  7. Cook in the oven for 30 minutes or until the cheese has gone golden brown and the capsicum has wilted.

Traditional Cooking Method

  1. Finely dice onion, garlic. Cook in frypan on med-high temp with a drizzle of olive oil.
  2. Dice up zucchini and mushrooms and add to onion and garlic. cook until onion, mushrooms slightly change colour and zucchini softens. Add turkey mince, and cook until cooked through.
  3. Add all other ingredients and stir to combine. Let this simmer over medium heat until the liquid has reduced and the mixture has thickened. Pre-heat oven to 180C while this is happening.
  4. In an oven proof dish place your halved capsicums - seeds removed. Grate the cheese and place to the side.
