We were asked to cook at the doTERRA Convention in Sydney (2019), this was totally epic and we loved every minute of it. This was one of the four dishes we presented on stage, the others were Indian Rice SaladGreen Mandarin Parfait and Pink Pepper and Lime Fajitas. We used white chocolate and that is our personal favourite for this recipe.

It is no secret that we love our doTERRA oils, and part of that love is because they are 100% food grade oils. Personally, we would not trust any other brand to be food grade and as safe as doTERRA, so please, if you use another brand of oils you will need to ensure they are of the highest quality and approved for use within food.

Tips for melting chocolate – Place a pot with water over a medium heat and bring to a very gentle simmer. Place a heatproof bowl on top of the pan so that it fits snuggly but doesn’t touch the water (adjust the water level if needed, be careful not to splash any in the chocolate). Lower the heat to a very gentle simmer. Break up the chocolate and add to the bowl, then leave to melt for 4-5 mins, stirring regularly.

Ingredients

  • 500 g organic chocolate
  • 5 drops doTERRA Green Mandarin Essential Oil
  • 2 c mixed nuts and seeds

Instructions

Traditional Method

  1. Snap into chunks prior to serving.
  2. Sprinkle the top with nuts/seeds of your choice, then place in the fridge to set (approx. 2 hours).
  3. Add in the Green Mandarin essential oil and stir for 5 seconds/speed 2. Spread out onto an oven tray lined with baking paper.
  4. Chop chocolate into small pieces and add to mixing jug. Melt for 3 minutes/temp 60/speed 2, or until the chocolate is runny and smooth.

Thermal Method

  1. Chop chocolate into small pieces and using a two-bowl (read tips) method melt until the chocolate is runny and smooth. Do not allow it to boil.
  2. Add in the Green Mandarin essential oil and stir well. Spread out onto an oven tray lined with baking paper.
  3. Sprinkle the top with nuts/seeds of your choice, then place in the fridge to set (approx. 2 hours).
  4. Snap into chunks prior to serving.
