This one is for all the fussy families out there, cause we know the struggle is real when it comes to picky eaters.  This recipe will hopefully have them coming back for more!  It is super tasty, easy to make and budget-friendly.  It can be boosted with a few extra veggies if you wanted, but that will totally depend on your taste buds.

Ingredients

  • 500 g chicken mince
  • 1/2 brown onion
  • 2 tbsp. mexican spice mix
  • 1 tbsp. chicken bone broth powder (optional)
  • 1 carrot
  • 1/2 zucchini
  • 1/2 c frozen corn
  • 4 fresh tomatoes (or 1 x 400g tin diced tomatoes)
  • 1 400 ml tinned black beans
  • sour cream, freshly grated cheese, sweet chilli sauce and salads of choice to serve with the TACOS

Instructions

Thermal Cooking Method

  1. Heat a large frying pan to medium-high, add chicken mince and cook until colour has changed, stirring occasionally.
  2. While that is cooking cut onion, carrot and zucchini into pieces and place into mixing jug and blitz for 3 seconds/speed 5. Tip into chicken mince and cook for a further 3 minutes.
  3. Add mexican spice mix and chicken bone broth powder, stir through and cook for a further 5 minutes.
  4. Add corn, tomatoes and washed and strained beans, and gently stir through. Heat taco shells as per packet instructions.
  5. Cook for 5 minutes then serve with salads of choice, sour cream, grated cheese and some sweet chilli sauce.

Traditional Cooking Method

  2. While that is cooking finely dice onion, grate the carrot and zucchini then add to chicken mince and cook for a further 3 minutes.
  3. Add mexican spice mix and chicken bone broth powder, stir through and cook for a further 5 minutes.
  4. Add corn, tomatoes and washed and strained beans, gently stir through. Heat taco shells as per packet instructions.
  5. Cook for 5 minutes then serve with salads of choice, sour cream, grated cheese and some sweet chilli sauce.
