Chicken and Bean Tacos

This one is for all the fussy families out there, cause we know the struggle of fussy kids. This recipe will knock their socks off! It is super tasty, easy to make and budget friendly. It can be boosted with a few extra veggies if you wanted, but that will totally depend on your taste buds.

Ingredients

  • 500 g chicken mince
  • 1/2 brown onion (or one very small onion)
  • 2 tbsp. Mexican Spice Mix (recipe linked above)
  • 1 tbsp. Chicken Stock Powder (any flavour is fine) - purchase from link above
  • 1 carrot
  • 1 small zuchinni
  • 1/2 cup frozen corn
  • 4 fresh tomatoes (or 1 x 400g tin diced tomatoes)
  • 1 tin black beans, drained and rinsed well (kidney, mixed or cannellini beans would all work fine)
  • Sour cream, freshly grated cheese, sweet chilli sauce and salads of choice to serve

Instructions

Thermie Cooking Method

  1. Heat a large frying pan to medium hot, add chicken mince and cook until colour is changed, stirring occasionally.
  2. Whilst that is cooking place onion, carrot and zucchini into thermie jug and blitz for 3 secs/speed 5. Tip into chicken mince and mix well.
  3. Add Mexican spice mix and chicken stock powder, stir through well. Cook for a further 5 minutes.
  4. Add corn, tomatoes and beans and gently stir through. Cook for 5 minutes then serve with salads of choice, sour cream, grated cheese and some sweet chilli sauce.

Traditional Cooking Method

  1. Heat a large frying pan to medium hot, add chicken mince and cook until colour is changed, stirring occasionally.
  2. Whilst that is cooking finely slice onion, carrot and zucchini. Add to chicken mince and mix well.
  3. Add Mexican spice mix and chicken stock powder, stir through well. Cook for a further 5 minutes.
  4. Add corn, tomatoes and beans and gently stir through. Cook for 5 minutes then serve with salads of choice, sour cream, grated cheese and some sweet chilli sa

    Loved this, thank you – very easy and tasty! I mixed it with brown rice instead of eating in tacos which was great too.
