Roast Chicken is an all time favourite in both our houses, and this one, with lemon, is the bomb!!

Ingredients

  • 1 large roasting chicken
  • 1 lemon
  • 1 tbsp. paprika
  • 1 tbsp. oregano
  • 1 tsp. garlic powder
  • 1 tbsp. oil or butter
  • salt and pepper to taste

Instructions

  1. Preheat oven to 200C and line a large baking dish with some baking paper.
  2. Ensure your chicken is clean and remove any excess fat.
  3. Rub the butter or oil, using your hands, all over the chicken then sprinkle with the herbs, spices and lemon zest. Rub this into the skin to coat the entire chicken.
  4. Place the flesh of the lemon inside the chicken.
  5. Place chicken on a rack sitting inside your baking dish (I like to add about half a cup of water to the baking dish as well).
  6. Bake for 20 mins then turn the oven down to 150C and continue to cook until your chicken is done. Mine took another hour and 20 mins, but it was a very large chicken. Test by sticking a knife into your chicken and if the juices run clear it should be cooked.
  7. Tip - this is a great recipe to double, so cook two chickens side-by-side and freeze one for another night
