This is so good, just saying!!! This is so much better for you than preservative and additive-filled potato salads you find in the shops.

It is so easy to make, you can double the recipe if needed (in fact you can make as much as you like really). Perfect for family gatherings.  Add some shredded chicken instead of diced bacon for a twist.

Ingredients

  • 6 potato
  • 3 rashers nitrate-free bacon
  • 2 tbsp. corn relish
  • 1/2 c sour cream
  • 1/2 c whole egg mayonnaise
  • 1 spring onions

Instructions

  1. Peel and dice potatoes. Place potatoes in a large pot and cover with water. Bring to the boil over high heat, then reduce to medium and cook potatoes until tender. Drain and transfer to a large bowl.
  2. While potatoes are cooking, dice the bacon and fry until nice and crispy. Drain on some paper towel.
  3. To make the dressing mix relish, sour cream, mayonnaise and thinly sliced spring onions in a bowl until well combined.
  4. While potatoes are still slightly warm, pour over the dressing, add bacon and mix through.
  5. Store in the fridge for up to a week.
