I love savoury foods, and these herb muffins are my favourite!  These are great to make for birthday parties, or gatherings because they are easy to make in advance as they freeze well. I like to make a batch when I can and pop them in the freezer so on the day of the party all I need to do is get them out, chop them open and fill with the cream cheese.  Yummy!

TIP: These freeze well, even with the cream cheese filling.
TIP: Serve cold if filled, but could be served warm if not filled.
TIP: You can leave out the bacon if you want to make these vegetarian.

Ingredients

  • 150 g cheddar cheese
  • 1 carrot
  • 2 kale or spinach leaves
  • 2 egg
  • 1 tbsp. mixed herbs
  • 280 g self-raising flour (gluten-free works well)
  • 220 g milk of choice
  • 4 rashers nitrate-free bacon
  • 1 pinch salt

Filling

  • 250 g cream cheese
  • 2 tbsp. dried or fresh chives chives
  • 1 pinch chilli flakes (optional)

Instructions

Thermal Cooking Method

  1. Preheat oven to 200°C and grease and flour a 24 hole mini muffin tray.
  2. Roughly chop cheese, carrot, and kale (or spinach) and place into mixing jug. Blitz for 10 seconds/speed 7.
  3. Dice up the bacon and add to the mixing jug together with all remaining ingredients and mix for 10 seconds/speed 4/reverse.
  4. Spoon mixture into greased muffin tray and cook in oven for 15-17 minutes or until a skewer inserted comes out clean.
  5. Let them cool on a wire rack.
  6. Once cool, mix together filling ingredients in a bowl.
  7. Cut muffin in half and place 1 tsp. of filling in the centre of each muffin then sandwich back together.

  3. Spoon mixture into greased muffin tray and cook in oven for 15-17 minutes or until a skewer inserted comes out clean.

  5. Once cool, mix together filling ingredients in a bowl.
  6. Cut muffin in half and place 1 tsp. of filling in the centre of each muffin then sandwich back together.
