This is one of most favourite camping recipe and can be found in our camping edition cookbook. It is so easy and perfect for the entire family. It is also extremely budget conscious and can be adapted to suit your taste buds – add more veggies, and more chilli, use different beans… serve it with corn chips and salsa, or over baked potatoes… the options are endless!

It’s so filling from the protein of the lentils and beans that it should keep those hungry tummies full for ages.

Ingredients

  • 1 c freshly grated cheese
  • 500 g pasta
  • 1 tsp. olive oil
  • 1 brown onion
  • 1 garlic clove
  • 1 tsp. mixed herbs
  • 1 zucchini (small)
  • 1/2 red capsicum
  • 1/2 green capsicum
  • 1 carrot
  • 1/2 c BBQ sauce
  • 2 tbsp. tomato paste
  • 420 g tin tomatoes
  • 2 425g tin lentils

Instructions

  1. Heat olive oil in a large frying pan over medium heat, sauté onion, and garlic for 2 - 5 minutes until onion is translucent.
  2. Add remaining ingredients (except cheese) to the frying pan and simmer for 15-20 minutes, stirring often.
  3. Cook pasta as per packet instructions just prior to serving.
  4. Serve with freshly grated cheese, sour cream and some sweet chilli sauce.
