Hokey Pokey Biscuits are a great little treat for your little one (or you for that matter!). The Hokey Pokey bits give them such a lovely added flavour and we bet you will be asked to make them again and again. You can easily double this recipe, and they freeze well.

Ingredients

  • 125 g soft butter
  • 80 g raw sugar
  • 1 tbsp. milk
  • 1 tbsp. golden syrup
  • 240 g self raising flour
  • 50 g hokey pokey bits
  • 50 g choc chips

Instructions

  1. Preheat your oven 160ºC and line two flat baking trays with baking paper or silicon mats.
  2. If your butter is straight out of the fridge then soften by placing in your mixing jug and mix for 30 seconds/37ºC/speed 3. If your butter is already soft add it directly to your jug.
  3. Add sugar to butter and mix 10 seconds/speed 3, scrape sides and repeat.
  4. Add milk and golden syrup and mix another 10 seconds/speed 3.
  5. Now add the flour and mix 10 seconds/speed 3. Don't worry if it's not all mixed in just yet.
  6. Add the hokey pokey bits and choc chips and mix on reverse 5 seconds/speed 2. If there is any flour not mixed in, then just use your spatula to mix the rest by hand.
  7. Roll into small balls, flatten slightly and place on your oven trays.
  8. Bake in oven for approx. 10-12 minutes until slightly golden. Allow to cool on trays for a few minutes before moving to a wire rack to cool completely.
