You can bulk this up by adding in a stack of blitzed up vegetables, such as mushrooms, spinach, carrots, celery, zucchini all come to mind.

Ingredients

  • 1 pinch pepper
  • 1 tsp. olive oil
  • 1 kg beef mince
  • 1 brown onion
  • 2 garlic clove
  • 400 g tin tomatoes
  • 2 tbsp. vegetable stock paste
  • 1 tbsp. beef bone broth powder (optional)
  • 1 tsp. mixed herbs
  • 1 pkg lasagne sheets (gluten-free works well)
  • 3 c freshly grated cheese

White Sauce Ingredients

  • 80 g butter
  • 4 tbsp. plain flour (gluten-free flour works well)
  • 600 g milk
  • 1 pinch salt

Instructions

  1. Add olive oil to a large frying pan over medium-high heat, brown mince for approx. 5 minutes until it changes in colour. Stir and break up any lumps with a wooden spoon.
  2. Peel and quarter onion, peel garlic and place both in mixing jug and blitz for 5 seconds/speed 5 (or finely dice), add to mince whilst browning. Once the mince has changed colour, blitz vegetables for approx. 5 seconds/speed 5, including the tomatoes (or grate and finely dice, depending on veggies of choice) and add to mince.
  3. Add vegetable stock paste, bone broth powder, and mixed herbs to the mixture, stir in well then turn the heat down to a simmer for approx. 15 minutes. Stirring occasionally.
  4. Preheat the oven to 180ºC and grate the cheese.
  5. Now it's time to make the white sauce. If using a thermal cooking device, place all ingredients into your mixing jug and cook 7 minutes/90ºC/speed 4.
  6. If you don't have a thermal cooking device, melt butter in pot over medium heat, add flour to combine. Slowly add milk, whisking constantly to break up and ensure there are no lumps. Stir until desired thickness is achieved.
  7. Once everything is ready you can start to assemble your lasagne. Start with a very thin layer of white sauce, then lasagne sheets, and then mince. Repeat this process until you have used up all the mince mixture (sauce, mince, lasagne, etc). If you dish doesnt fit all this then you can just simply make this in a separate dish. Finish with a nice thick layer of white sauce and top with freshly grated cheese.
  8. Bake in oven for 40 minutes or until cheese is golden brown, and the edges are bubbling.
  9. Remove from oven and set aside for 10 minutes to set then serve. Serve with steamed vegetables or a fresh garden salad of choice.
