Wow, just wow. When we tested this recipe we gave our Dad a pie, he rated it one of the best scallop pies he had ever tasted…and let us say, he is brutally honest, so would have told us if we had to try again, lol!!

We made six little pies, more lunch sized, but you could make a big family size if you desire. Note – you will need to adjust the cooking time if making a larger pie.

If you can’t find fresh scallops you can use frozen ones, just ensure they are ocean caught and from a reputable country (like Australia or NZ).

Ingredients

  • 40 g butter
  • 2 tbsp. plain flour
  • 300 g milk
  • 2 tsp. curry powder
  • 1 small brown onion
  • 1 tsp. additional butter for cooking
  • 20 fresh scallops (approx 4-6 per pie)
  • 2 sheets butter puff pastry

Instructions

Thermal Cooking Method

  1. Add butter, plain flour, milk and curry powder to the thermie jug and cook for 7 mins/90C/speed 4.
  2. Whilst that is cooking, heat a frying pan to medium/hot. Add extra butter and fry off the onions for 3 mins, add the scallops and cook for 5 mins (or until just done).
  3. Pour the curry sauce into the frying pan with the scallops, mix well and set aside while you get pastry ready.
  4. Cut out pastry into circles and place into pie machine. Add filling and place pastry lid on top. Cook for approx 15 mins (or until nice and golden)

Traditional Cooking Method

  1. Add butter, plain flour, milk and curry powder to a large pot and turn heat to medium/hot. Stir continuously until it thickens. Remove from heat as soon as it is thick.
  2. Whilst that is cooking, heat a frying pan to medium/hot. Add extra butter and fry off the onions for 3 mins, add the scallops and cook for 5 mins (or until just done).
