What Aussie BBQ doesn’t involve someone making or bringing a potato bake?  I mean seriously, this was a staple that we had at every family BBQ we went to.  I think because of how super easy it is to make, relatively cheap and most people love it!

Before going additive-free I would normally use a pre-packet mix to make this – not anymore.  To be honest I am not even sure why I did back then, as it is so easy to make it from scratch.

Ingredients

  • 6 potato
  • 1/2 brown onion
  • 2 garlic clove
  • 3 rashers nitrate-free bacon
  • 1 tsp. dried parsley
  • 1 tsp. dried mixed herbs
  • 1 tbsp. seeded mustard
  • 250 g pure cream
  • 1 c freshly grated cheese

Instructions

  1. Preheat oven to 170֯ºC.
  2. Peel and slice the potatoes. Layer potatoes into an oven-safe dish leaving room at the top for the mixture.
  3. Finely dice onion and crush garlic. Add onion, garlic and remaining ingredients (except cheese) into a separate bowl and mix together well.
  4. Pour mixture over potatoes and gently shake dish. This will allow the cream mixture to run through the potatoes.
  5. Top with freshly grated cheese.
  6. Cook in the oven for 45 minutes until potatoes are cooked through and cheese is golden brown.
