This recipe is a massive winner.  I haven’t heard of one negative comment when we have made these either for our own families, their friends or from you.

If your kids are on the fussier side still add the vegetables and see if they notice.  We don’t think they will :)

These freeze really well raw or once cooked.

Ingredients

  • 1 brown onion
  • 1 garlic clove
  • 2 carrot
  • 1 zucchini
  • 3 broccoli florets
  • 500 g chicken mince
  • 1 egg
  • 1 c breadcrumbs (gluten-free works well)
  • 1 pinch salt and pepper
  • 3 tsp. ghee, coconut oil or olive oil

Coating

  • 2 tbsp. chia seeds (optional)
  • 1/4 tsp. cracked pepper (or to taste)
  • 160 g breadcrumbs (gluten-free works well)
  • 1 pinch salt and pepper

Instructions

Thermal Cooking Method

  1. Peel and chop onion into four. Add this along with peeled garlic to mixing jug and chop 5 seconds/speed 5. Add 1 tsp olive oil and cook 3 minutes/100C/speed 3.
  2. Chop carrot and zucchini into four pieces and place into mixing jug. Add broccoli florets and chop 5 seconds/speed 5. Scrape down the sides and repeat.
  3. Add chicken mince, egg, breadcrumbs, salt and pepper and mix for 10 seconds/speed 4/reverse. You may need to use the thermal spatula through the hole of the lid to move the mixture around.
  4. Option one: In a large frying pan, over med-high heat add 2-3 tbsp of oil (this will depend on how big the pan is). Once the oil is hot, add the nuggets and cook on each side. Drain on paper towel and serve when ready.
  5. Option two: Preheat an oven to 180C. Lay nuggets on a large sheet of baking paper and spritz with some olive oil, cook for 10 minutes then turn. Cook the other side for another 10 minutes.

Traditional Cooking Method

  1. Peel onion and garlic and finely dice. Heat a frying pan over med-high and heat 1 tsp olive oil. Cook onion and garlic until translucent then transfer to a large bowl.
  2. Grate the carrot, zucchini and broccoli and add to bowl with the onion.
  3. Add chicken mince, egg, breadcrumbs, salt and pepper. Mix together well.
  4. In a large bowl add the 'coating' ingredients. Dollop spoonfuls of mixture the breadcrumb mixture and coat well. You can make these into large burgers, or small nuggets. Either way, these are delicious.
