This isn’t the only chicken nugget recipe we have in our collection, just do a search on either our website or our App to find other varieties we’ve made.  But to be honest, I reckon these ones are the best!  The feta cheese gives them a salty flavour and they were totally demolished by my kids (although the other recipe is too).  Perhaps you might like to make both versions and see which one you like the best.

We served these nuggets with some homemade chippies.  Us adults? well, we had chicken nuggets and chips too!  Why not!?  They are YUM!

You can easily make this gluten-free by using gluten-free breadcrumbs.  You can team these nuggets up with our tomato sauce, BBQ Sauce, and/or sweet chilli sauce

Making a massive batch of these and popping them in the freezer for school lunches is such a great idea.

Ingredients

  • 150 g sweet potato
  • 1 carrot
  • 500 g chicken mince
  • 1 tsp. dried thyme
  • 75 g greek fetta cheese
  • 2 c fresh breadcrumbs (gluten-free works well)
  • ghee, coconut oil, olive oil or a combo of olive oil and butter for frying

Instructions

Thermal Cooking Method

  1. Peel sweet potato and carrot. Dice into small pieces (approx 1-2cm) and place in simmering basket. Add basket to mixing jug and cover with water. Cook on steaming temp (the hottest the machine goes) for 20 minutes/speed 1. After that, prick the veggies with a fork and test to see if they are cooked.
  2. Once they are cooked discard the water and tip the veggies into the mixing jug. Add chicken mince, herbs, and broken up fetta cheese. Mix for 20 seconds/speed 4/reverse. You may need to use the thermal spatula to move the mixture around.
  3. In a large bowl add the breadcrumbs. Dollop spoonfuls of mixture the breadcrumbs and coat well. You can make these into large burgers, or small nuggets. Either way, these are delicious.
  4. Option one: In a large frying pan, over med-high heat add 2-3 tbsp of oil (this will depend on how big the pan is). Once the oil is hot, add the nuggets and cook on each side. Drain on paper towel and serve when ready.
  5. Option two: Preheat an oven to 180C. Lay nuggets on a large sheet of baking paper and spritz with some olive oil, cook for 10 minutes then turn. Cook the other side for another 10 minutes.
