Healthy, warming and soothing to the soul!

When winter hits, this soup recipe comes out to warm us from the inside out.  This is packed full of extra goodness to show your insides some extra love and nourishment.

Ingredients

  • 1 brown onion
  • 1 tbsp. olive oil
  • 500 g chicken thigh
  • 500 g water
  • 1 tbsp. chicken bone broth powder (or 500g chicken broth)
  • 1 tsp. turmeric powder
  • salt to taste
  • 1 packet rice noodles

Instructions

Thermal Cooking Method

  1. Chop onion into four and add to thermal mixing jug. Chop for 3 seconds/speed 6.
  2. Dice the chicken and add to mixing jug. Add the olive oil and cook for 3 minutes/100C/speed 1/reverse.
  3. Add all other ingredients (except noodles and obmit water if using chicken liquid broth), and cook 15 minutes/100ºC/speed 1/reverse.
  4. Break up noodles and place into serving bowl(s).
  5. Pour soup over noodles and wait for 2 minutes whilst noodles soften.
  6. Serve and enjoy.

Traditional Cooking Method

  1. Finely dice the onion and garlic and dice the chicken. In a large saucepan heat over medium-high and add olive oil. Cook onion/garlic/chicken for 3-5 minutes until chicken has browned.
  2. Add all other ingredients (except noodles and obmit water if using chicken liquid broth), and simmer slowly until chicken has cooked through and the flavours have incorporated.
  3. Break up noodles and place into serving bowl(s).
  4. Pour soup over noodles and wait for 2 minutes whilst noodles soften.
  5. Serve and enjoy.
