These meatballs make the perfect party food.  They are also great for lunchboxes as they are quite yummy cold.  If you don’t want them too spicy, leave out the cayenne pepper, that is totally up to you.

Another idea is to make a batch and freeze them in airtight containers.  Then when ready to eat, allow to defrost and heat up in the oven, frying pan or microwave.

Ingredients

  • 1/2 brown onion
  • 100 g carrot
  • 100 g zucchini
  • 50 g red capsicum
  • 60 g tasty cheese
  • 60 g parmesan cheese
  • 500 g chicken mince
  • 1/2 c breadcrumbs (gluten-free works well)
  • 1 egg
  • 1/2 tsp. cayenne pepper (optional)
  • 1 tsp. mixed herbs
  • 2 tbsp. olive oil

Instructions

Thermal Cooking Method

  1. Chop parmesan and tasty cheese into small pieces and add to mixing jug. Chop 10 seconds/speed 6. Remove and sit aside. No need to wash the jug.
  2. Peel onion and chop into four. Add to mixing jug and chop 5 seconds/speed 5. Add 1 teaspoon olive oil and cook 3 minutes/100C/speed 1.
  3. Chop carrot, zucchini and capsicum (seeds removed) into four and add to mixing jug. Chop 5 seconds/speed 4.
  4. Add chicken and all remaining ingredients (except oil), including the cheese. Mix on reverse, 15 seconds/speed 4. Use the Thermal spatular through the hole of the lid to move the mixture around. If the mixture is too much mix it together by hand.
  5. Preheat a large frying pan over med-high heat and add the oil. Roll mince mixture into golf size balls and cook each side until cooked through.
  6. Serve with sweet chili dipping sauce, sour cream and/or tomato sauce.

Traditional Cooking Method

  1. Finely dice the onion and heat a large frying pan over med-high heat with 1 tsp of oil. Cook until cooked through and then transfer to a large bowl.
  2. Grate the carrot and zucchini and add to mixing bowl along with the onion. Finley dice the capsicum and add that too.
  3. Finely grate the parmesan and tasty cheese. Add to onion/veg mixture plus add all remaining ingredients (except oil). Stir to combine.
  4. Preheat a large frying pan over med-high heat and add the oil. Roll mince mixture into golf size balls and cook each side until cooked through.
