This is one of our favourite salad recipes, it is delish served plain to accompany the main dish, or for lunch or dinner on its own.  Feel free to add some protein by grilling some chicken to serve warm with the salad.

The thing with caesar salads is that the store-bought versions can be chock full of additives found in the bacon (nitrates), croutons (flavour enhancers, yeast extract, preservatives, flavours), dressing (flavour enhancers, yeast extract, vegetable/seed oils, flavours) which doesn’t make for a pleasant eating experiencing knowing you’re consuming all these nasties.

When sourcing your ingredients here’s what you need:

Bacon: Nitrate and nitrite free. You can source this from the supermarket or ask around at your local butchers.
Sourdough: Preservative-free.
Parmesan cheese: Buy it in block form as you will avoid additives this way. It should only really contain milk, salt, cultures, and enzymes.

Ingredients

  • 2 sourdough bread rolls or 4 pieces of bread
  • 2 tbsp. olive oil
  • 4 rashers nitrate-free bacon
  • 4 egg
  • 1 cos lettuce
  • 40 g parmesan cheese
  • 4 tbsp. caesar salad dressing

Instructions

  1. Preheat oven to 180ºC and line a tray with baking paper. Cut bread into cubes for croutons and lay flat in a single layer on a baking tray. Spritz with a little oil and bake for 10-15 minutes or until crisp and golden. Set aside to cool completely.
  2. Add eggs to a pot of water and boil for 10 minutes. Discard the water and place eggs in cold water to cool down. Peel the shell, chop in half and sit aside.
  3. In a frying pan over medium heat cook the bacon stirring regularly for 5-7 minutes or until crisp and browned. Transfer to a plate lined with paper towel and allow to cool.
  4. Make the caesar dressing if not done so. Recipe linked in description or your'll find it in our App.
  5. In a large bowl add lettuce and coat with dressing. Serve the lettuce in individual bowls. Sprinkle with bacon, top with egg, croutons, cheese and grilled chicken if using.
