This is a bit of a cheat dressing but a far better choice than most from the supermarket shelves. You will find that most salad dressings are full of preservatives, food colours, and additives that our bodies find hard to digest. This often leads to bloating, tiredness, nausea, and restfulness.

Ingredients

  • 2 garlic clove
  • 1 anchovy
  • 10 baby capers
  • 20 g parmesan cheese
  • 1/2 tsp. honey
  • 150 g sour cream
  • 1 tbsp. fresh lemon juice
  • 2 tbsp. white vinegar
  • 2 egg yolk
  • 1 tsp. worcestershire sauce
  • 1 tsp. dijon mustard
  • 40 g mayonnaise
  • 20 g caster sugar

Instructions

Thermal Cooking Method

  1. Turn the blades onto speed 9 and via the hole in the lid, drop the garlic, anchovy, baby capers and cheese into it. Then blitz for a further 10 seconds.
  2. Add everything else and blitz again for 20 secs/speed 8.
  3. Use immediately or store in an airtight jar for only 1-2 days.

Traditional Cooking Method

  1. Using a stick blender or mortar and pestle, puree the garlic, anchovy, and baby capers until fine.
  2. Finely grate the parmesan cheese, then add to the garlic mix and puree again.
  3. Add everything else and stir until well combined.
  4. Use immediately or store in an airtight jar for only 1-2 days.
