We like to find an organic corn chip, which you can get from all supermarkets.  There are a few brands of corn chips around which are totally additive-free, but remember to use the additive-free lifestyle App so you don’t eat any unwanted MSG.

Ingredients

  • 1 brown onion
  • 1 garlic clove
  • 1 tbsp. olive oil
  • 1 red capsicum
  • 2 tins kidney beans
  • 1 tin crushed tomatoes
  • 1 tsp. dried thyme
  • 1 pinch of salt
  • 1 1/2 c freshly grated cheese
  • 1 large packet of corn chips
  • 1 avocado
  • 1 c sour cream

Instructions

Thermal Cooking Method

  1. Chop onion into four and add onion and garlic into the mixing jug. Chop 5 seconds/speed 5. Add olive oil and cook 3 minutes/100ºC/speed 1.
  2. Deseed capsicum and slice into four. Add to the thermal jug and chop 5 seconds/speed 5.
  3. Drain and rinse the kidney beans, then add to mixing jug. Also add tomatoes, thyme and salt. Cook for 20 minutes/100ºC/speed 1/reverse/MC off/simmering basket on top. The steam needs to escape.
  4. While that's cooking, preheat oven to 190ºC. Line a dish with corn chips around the outside of the dish.
  5. Once the bean mixture is cooked pour that into the centre of the corn chips, top with grated cheese and cook in the oven until cheese is melted. Approximately 5 minutes.
  6. Remove from oven, top with mashed avocado and sour cream. Serve and enjoy!

Traditional Cooking Method

  1. Dice onion and crush garlic. Heat a frying pan over medium heat, add olive oil and cook around 3 minutes until translucent.
  2. Dice the capsicum and add to cook through.
  3. Drain and rinse the kidney beans then add these along with, thyme, tomatoes, and salt. Cook over medium heat for approx. 15 minutes in a light simmer.
  4. While that's cooking, preheat oven to 190ºC. Line a dish with corn chips around the outside of the dish.
  5. Once the bean mixture is cooked pour that into the centre of the corn chips, top with grated cheese and cook in the oven until cheese is melted. Approximately 5 minutes.
  6. Remove from oven, top with mashed avocado and sour cream. Serve and enjoy!
