This apple and cinnamon yoghurt cake is soft and delicious, it is best served as a dessert with cream or even a scoop of ice cream!  A tip when making, make sure the butter is soft and it’ll mix a lot easier.  The apple gives it a lovely sweetness and the cinnamon sugar on top makes it absolutely glorious.

Ingredients

  • 130 g white sugar
  • 120 g butter
  • 200 g vanilla or natural yoghurt
  • 2 tsp. vanilla bean paste
  • 40 g almond meal
  • 370 g self-raising flour
  • 3 large egg
  • 2 green apple

Topping

  • 2 tbsp. brown or rapadura sugar
  • 1 tsp. ground cinnamon

Instructions

Thermal Cooking Method

  1. Preheat oven to 180°C and line a round cake tin with baking paper.
  2. Beat sugar and butter together until pale and creamy. 10 seconds/speed 4. Scrape and repeat until complete.
  3. Add yoghurt and vanilla bean paste and mix for 10 seconds/speed 4. Scrape down sides.
  4. Add almond meal and flour and mix for 10 seconds/speed 4.
  5. Mixing on speed 3, add eggs one at a time through the hole in the lid, this will take about 40 seconds as you want to beat between each egg.
  6. Using a spatula, pour half of the mixture into the prepared cake tin.
  7. Add the diced apple pieces evenly over the surface then pour the rest of the cake mixture over the apples and sprinkle the top with the sugar/cinnamon mix.
  8. Bake in the oven for 45 minutes or until a skewer comes out clean. Serve warm or cold with fresh yoghgurt or ice cream.

Traditional Cooking Method

  1. Preheat oven to 180°C and line a round cake tin with baking paper.
  2. In a large bowl, beat sugar and butter together until pale and creamy (electric beaters will make this easier).
  3. Add yoghurt and vanilla bean paste and mix with beaters until incorporated well.
  4. Add almond meal and flour and mix until incorporated.
  5. Turn down beaters to low speed and add eggs one at a time incorporating them well between eggs.
  6. Using a spatula, pour half of the mixture into the prepared cake tin.
  7. Add the diced apple pieces evenly over the surface then pour the rest of the cake mixture over the apples and sprinkle the top with your sugar/cinnamon mix.
  8. Bake in the oven for 45 minutes or until a skewer comes out clean. Serve warm or cold with fresh yoghgurt or ice cream.
