This white chocolate and macadamia biscuit is the best combination of biscuit around if you want our opinion anyway! I can not stop eating these which is a little dangerous, oh well…

Ingredients
- 250 g butter
- 100 g raw sugar
- 2 large egg
- 1 tsp. vanilla extract or paste
- 3 c self-raising flour
- 250 g white choc bits
- 250 g macadamia nuts
Instructions
- Preheat your oven to 160C and line two large flat baking trays with baking paper
- Blitz sugar for 5 seconds/speed 9, then add soft butter
- Cream butter and sugar 10 seconds/speed 4
- Scrape down sids and add vanilla
- Turn your machine onto speed 1 and add eggs, one at a time
- Leave machine going and add flour, one cup at a time through hole in lid
- Once all the flour has been added mix well for 10 secs/speed 4. Use your spatula to mix the rest by hand
- Add choc bits and chopped nuts and mix for 5 seconds/reverse speed 4. Or use your spatula and mix these in by hand as the mixture is quite thick
- Roll into small balls and flatten slightly. They will rise and spread a bit
- Bake for 10-15 minutes or until slightly golden
- Allow to cool for a few minutes before transferring to a wire rack to cool completely

These biscuits are absolutely amazing and if you can stop at just one, I commend you. I made them for everyone at Christmas time to give with my presents.
