This waldorf salad is just so lovely, fresh, sweet and yum!  It’s a real family favourite here, even the kids eat it!  We love this with some shredded chicken mixed through, served at a BBQ or with smoked salmon.  We use our Mum’s mayo recipe for this!

Tip: A small lemon will be enough for this recipe.
Tip: Instead of crispy lettuce, you could use cabbage. I used Chinese cabbage.

Ingredients

  • 2 red apple
  • 1 carrot
  • 1 lemon
  • 3 large handfuls walnuts
  • 1 c lettuce
  • 1 tbsp. mayonnaise

Instructions

Thermal Cooking Method

  1. Place apples (cored) and carrot (peeled and roughly chopped) into mixing jug and chop 3 seconds/speed 4.
  2. Squeeze in the juice of the lemon to stop the apples going brown and mix for 2 seconds/speed 2/reverse.
  3. Add walnuts, chopped lettuce, and mayonnaise. Mix for 3 seconds/speed 4/reverse.

Traditional Cooking Method

  1. Cut apples (cored) and peeled carrot into batons (or desired style) and place in bowl.
  2. Squeeze in the juice of the lemon to stop the apples going brown and gently mix through.
  3. Add walnuts, chopped lettuce, and mayonnaise. Mix until well combined.
