This waldorf salad is just so lovely, fresh, sweet and yum! It’s a real family favourite here, even the kids eat it! We love this with some shredded chicken mixed through, served at a BBQ or with smoked salmon. We use our Mum’s mayo recipe for this!
Tip: A small lemon will be enough for this recipe.
Tip: Instead of crispy lettuce, you could use cabbage. I used Chinese cabbage.

Ingredients
- 2 red apple
- 1 carrot
- 1 lemon
- 3 large handfuls walnuts
- 1 c lettuce
- 1 tbsp. mayonnaise
Instructions
Thermal Cooking Method
- Place apples (cored) and carrot (peeled and roughly chopped) into mixing jug and chop 3 seconds/speed 4.
- Squeeze in the juice of the lemon to stop the apples going brown and mix for 2 seconds/speed 2/reverse.
- Add walnuts, chopped lettuce, and mayonnaise. Mix for 3 seconds/speed 4/reverse.
Traditional Cooking Method
- Cut apples (cored) and peeled carrot into batons (or desired style) and place in bowl.
- Squeeze in the juice of the lemon to stop the apples going brown and gently mix through.
- Add walnuts, chopped lettuce, and mayonnaise. Mix until well combined.
