This is the perfect way to use up all your veggies that are getting a little bit ‘old’ – turn them into vegetable fritters and you have the perfect, tasty meal that you will all love. Accompany with some of our homemade tomato sauce or sweet chilli sauce. They are even perfect for lunches and taste delicious cold.  For dinner serve with a simple salad and you have a quick, easy, and nutritious meal.

Ingredients

  • 2 potato
  • 1 carrot
  • 2 zucchini
  • 3 egg
  • 100 g self-raising flour
  • 70 g corn
  • 1 brown onion
  • olive oil for frying

Instructions

Thermal Cooking Method

  1. Peel and quarter potatoes and onion and roughly chop carrot and zucchinis.
  2. Put potatoes, onions, carrot and zucchini into mixing jug and chop 6 seconds/speed 5 then tip into a mixing bowl.
  3. Add flour, eggs and drained corn to mixing bowl and mix until well combined.
  4. Fry little round dollops of the mixture until browned and golden on each side.

Traditional Cooking Method

  1. Finely dice potatoes, onion, carrot and zucchinis.
  2. Put all ingredients into a mixing bowl and stir until well combined.
  3. Fry little round dollops of the mixture until browned and golden on each side.
