This recipe is creamy and yummy.  It’s got a bit of a twist with the boiled eggs throughout and is great served with mashed potatoes and veggies, or pasta and salad.  This dish actually brings back memories from when we were kids.  Our mother hates it so we never ate it.  Anyway, we went to a friend of our mothers for dinner and she made this.  We sat with smirks on our faces knowing that mum hates tuna!  Well, guess what?  She ate the whole plate and asked for the recipe!  Now we’re passing it on to you.

If you don’t want to use plain white flour in this recipe it still works well using spelt, gluten-free or wholemeal flours.

Ingredients

  • 1 brown onion
  • 1 carrot
  • 80 g broccoli florets
  • 30 g butter
  • 50 g plain flour (spelt, gluten-free or wholemeal work well)
  • 500 g milk of choice
  • 1 tsp. curry powder
  • 1 tsp. dried oregano
  • 425 g tinned responsibly caught tuna in springwater
  • 250 g breadcrumbs
  • 80 g freshly grated cheese
  • 4 egg

Instructions

Thermal Cooking Method

  1. Bring a pot of water to boil. Reduce heat to low and carefully add the eggs. Cook for 12 minutes. Place into a bowl of cold water immediately. Set aside to cool slightly.
  2. Preheat oven to 190ºC.
  3. Put roughly chopped carrot, peeled and quartered onion and broccoli into mixing jug and chop 6 seconds/speed 5.
  4. Add curry powder, oregano, butter, flour, and milk and cook for 8 minutes/90ºC/speed 4.
  5. While that is cooking, peel the eggs and chop them in half. Also, grease a casserole dish with a little butter.
  6. Once the machine has finished, add tuna, 50g breadcrumbs and mix for 15 seconds/speed 3/reverse. Ensure all ingredients are combined well.
  7. Pour half of this mixture into the casserole dish. Top this with eggs and then pour the rest of the mixture on top to cover the eggs.
  8. Sprinkle with remaining breadcrumbs and grated cheese. Bake in oven for approx. 20 minutes, or until topping has melted and is golden brown.

Traditional Cooking Method

  3. Preheat oven to 190ºC.
  4. Finely dice carrot, onion and broccoli and place in a large pot.
  5. Add curry powder, oregano, butter, flour and milk and bring to the boil. Reduce heat and simmer for 10 minutes, stirring often.
  6. Add tuna, 50g breadcrumbs and mix until combined.
  7. Pour half of this mixture into the casserole dish. Top this with eggs and then pour the rest of the mixture on top to cover the eggs.
  8. Sprinkle with remaining breadcrumbs and grated cheese. Bake in oven for approx. 20 minutes, or until topping has melted and is golden brown.
