I was really surprised at how ridiculously easy these Sweet Potato Indian Pakora’s were to make!  I’m sure they aren’t the traditional Indian recipe, cause I just made them up, but they were so yummy so who cares!?

I was worried they’d taste like onion, which I really don’t like unless it’s cooked well, but they didn’t at all.  Even my kids ate them, which shocked the pants off me…

I cooked them in a mix of ghee and olive oil rather than deep frying them, and they were perfect.  We ate them with butter chicken and brown rice, but I wish I’d made some naan

Ingredients

  • 2 sweet potato
  • 4 tbsp. ghee or butter
  • 1/2 tsp. salt
  • 1/2 tsp. turmeric powder
  • 2 tsp. coriander powder
  • 2 tsp. cumin powder
  • 2 egg
  • 1 c plain flour (gluten-free works well)
  • 1 brown onion
  • 4 tbsp. olive oil

Instructions

  1. Grate sweet potatoes and onion and add to a bowl.
  2. Add remaining ingredients to the bowl and mix until well combined. If it's too dry add a touch of milk.
  3. Heat 1-2 tbsp. of ghee (or butter) and olive oil in a frying pan. Once hot, drop in a dollop of the mixture. Cook on both sides until done.
  4. Drain on paper towel before serving.
