I don’t tend to cook pork very often, I generally stick to the favourites of chicken and mince. But these chops were on sale so I figured, why not? I just had to decide what to do with them…

After looking through our recipes for some inspiration, and thinking about what flavours go nice with pork, I ended up with this. We enjoyed it, and I hope you do also.

Ingredients

  • 10 pork chop
  • 50 g brown or rapadura sugar
  • 1 brown onion
  • 1 garlic clove
  • 1 tsp. mustard powder
  • 1 tsp. sweet paprika
  • 1 tbsp. sweet chilli sauce
  • 1 tbsp. tamari or soy sauce

Instructions

  1. Place the pork in an oven safe dish and set aside.
  2. Pour this over the pork. Cover and leave to marinate for at least 4 hours, but overnight is best.
  3. Blitz everything else in your thermie for 5 seconds/speed 5 or pulse in your blender until all mixed together.
  4. Place into the oven and cook on 150ºC for 2 hours, or place in the slow cooker and cook on low for 6 hours.
  5. Serve with veggies, salad, homemade chips - whatever you like really!
