This Seeded Mustard and Chicken Pie was created because we wanted something a little different.  Well, it turned out great and has been a total #winner in our house!  Everyone in our family demolishes it, so it’s become a regular go-to fave!!

Ingredients

  • 2 skinless chicken breast
  • milk for basting pastry
  • 1 sheet puff pastry
  • 1 sheet shortcrust pastry
  • pinch salt and pepper
  • 150 g cream
  • 1 tbsp. seeded mustard
  • 2 tbsp. plain flour
  • 1 tbsp. vegetable stock paste
  • 1 brown onion
  • 2 garlic clove
  • 1 tbsp. chia seeds for sprinkling on top (optional)

Instructions

Thermal Cooking Method

  1. Preheat your oven to 180ºC (fan forced) and grease a pie dish with some butter. Place the shortcrust pastry in the bottom of your pie dish ready for the chicken mix (the puff pastry goes on top later).
  2. Place garlic and onion in your mixing jug and blitz 3 seconds/speed 7. Scrape down sides and cook for 1 minute/100ºC/speed 2 (you might want to add a tsp. of oil or water when cooking).
  3. Add diced chicken and cook for 5 minutes/100ºC/speed 2/reverse. Scrape down sides if needed.
  4. Add all other pie ingredients (except pastry, milk or chia seeds) and cook for 4 minutes/70ºC/slowest speed/reverse.
  5. Now cook for 2-3 minutes/100ºC/reverse to thicken up the sauce.
  6. Pour this chicken mix into your prepared pie dish and top with the puff pastry. Baste with milk and sprinkle with chia seeds.
  7. Bake for approx. 30 minutes or until golden on top.

Traditional Cooking Method

  1. Preheat your oven to 180ºC (fan forced) and grease a pie dish with some butter. Place the shortcrust pastry in the bottom of your pie dish ready for the chicken mix (the puff pastry goes on top later).
  2. Finely dice the garlic and onion and cook in a pan on medium heat with some olive oil until translucent.
  3. Add diced chicken and cook for 5 minutes until almost cooked through.
  4. Add all other pie ingredients (except pastry, milk or chia seeds) and cook for 7-10 minutes or so until cooked through and sauce thickened.
  5. Pour this chicken mix into your prepared pie dish and top with the puff pastry. Baste with milk and sprinkle with chia seeds.
  6. Bake for approx. 30 minutes or until nice and golden on top.
