What is a buddha bowl you ask? A buddha bowl is a healthy wholesome dish that is served in a large bowl which represents the shape of Buddha’s belly! A bowl that everyone can dig into and share their love of food.
It sounds so nourishing hey?! So here is our take on a buddha bowl with some Satay Chicken, a good ole’ family favourite.
It’s so quick to prepare, so make sure you have pre-cooked your rice in advance so it is ready to serve up.

Ingredients
- 500 g chicken thigh
 - 1 c brown or white rice
 - pinch salt
 - 1/4 c water
 - 1 lemon
 - 2 tbsp. coconut oil
 - 1 tbsp. chicken bone broth powder
 - 2 tbsp. coconut butter
 - 2 tbsp. peanut butter
 - fresh vegetables of choice for buddha bowl (eg. carrot, beans, cabbage, capsicum etc.)
 
Instructions
- Pre-cook your rice ahead of time so it is ready to plate up at the end.
 - Have all the veggies pre-cut and the chicken cut into strips before you start cooking.
 - Add coconut oil to a frying pan and heat to med-high heat.
 - Add the chicken and cook until golden and seared on all sides
 - Once golden add the salt, water, lemon juice, chicken bone broth powder, coconut butter, and peanut butter and cook until warmed through.
