Rocky Road is a bit of a tradition for us, it also holds sentimental value because this is our Aunty Marg’s recipe.  We make this every single Father’s Day as it’s my husband’s favourite and the kids love making it too!

We even made our own marshmallow and tinted it pink using Hoopers all-natural food colours.  This marshmallow is amazing!  If you pick the right lollies and chocolate you can make this additive-free too!

Ingredients

  • 400 g melting/cooking milk chocolate
  • 3/4 pkg snake or jelly baby lollies
  • 1 c white marshmallow
  • 30 g desiccated coconut
  • 100 g unsalted peanuts (optional)

Instructions

Thermal Cooking Method

  1. Chop your snakes or jelly babies into small bits, about 1/2 cm long - we find using scissors easiest. Don't use a thermal appliance as they will turn into puree mush and it won't work.
  2. Melt the chocolate by breaking up the pieces in bits and melt for 5 minutes/60ºC/speed 2.
  3. It may not take that long, it will depend if your chocolate is at room or fridge temperature. Ours only took 2 minutes to melt as it was a hot day, and the chocolate had been sitting on the bench for ages first.
  4. Once it has melted, add all the other ingredients (including peanuts if using) and mix for 10 seconds/speed 3/reverse.

Traditional Cooking Method

  1. Chop your snakes or jelly babies into small bits, about 1/2 cm long - we find using scissors easiest.
  2. Melt the chocolate by breaking up the pieces in bits and place in a glass bowl over a boiling pot of water (making sure the glass bowl doesn't touch the boiling water and stirring constantly until melted.
  3. Once it has melted, add all the other ingredients (including peanuts if using) and mix until well combined.
  4. Pour the mix into a lined tin and let it set for about an hour in the fridge before serving.
