Want a healthier style pikelet to have in the morning, then give these a try.  They are super fluffy and a real hit with our family.  They are so quick to make and will keep you full right through the morning until lunch.

The tip to making them fluffier is to sift the flour and bicarb soda.

Ingredients

  • 2 banana
  • 400 g wholemeal self-raising flour
  • 2 egg
  • 1/2 tsp. bicarb soda
  • 300 g milk of choice
  • 25 g rice malt syrup
  • 1/4 c butter

Instructions

Thermal Cooking Method

  1. Place all ingredients (except butter) into the mixing jug and mix for 10 seconds/speed 4.
  2. Heat a frying pan over medium heat. Put approx. 1 tsp of butter in the pan and let it melt.
  3. Place a large spoon of mixture into the frying pan and cook until golden on each side (flip pikelet over when bubbles start to appear).
  4. Serve with topping of choice such as fresh fruits, yoghurt, and 100% pure maple syrup.

Traditional Cooking Method

  1. Mix all ingredients (except butter) in a large bowl until well combined.
  2. Heat a frying pan over medium heat. Put approx. 1 tsp of butter in the pan and let it melt.
  3. Place a large spoon of mixture into the frying pan and cook until golden on each side (flip pikelet over when bubbles start to appear).
  4. Serve with topping of choice such as fresh fruits, yoghurt, and 100% pure maple syrup.
