These Zucchini Slice Bites are packed with vegetables and a whole lot of goodness.  I must admit I was a little worried my kids wouldn’t eat them but they did! Tasty and full of goodness.

Tip: We used a mix of tasty and parmesan cheese.

Ingredients

  • 2 zucchini
  • 2 carrot
  • 1 brown onion
  • 250 g ham or nitrate-free bacon
  • 3 egg
  • 2 tbsp. vegetable stock paste
  • 30 g olive oil
  • 1 c plain flour
  • 50 g cheese

Instructions

Thermal Cooking Method

  1. Preheat oven to 180ºC and grease a mini muffin tray with some olive oil.
  2. Add zucchinis, carrots, and onions into the mixing jug and chop for 3 seconds/speed 5. Set aside in a large bowl.
  3. Grate the cheese for 4 seconds/speed 5 and add this to the large bowl.
  4. Dice the ham (or bacon) and add to the large bowl along with the rest of the ingredients. Mix well with a fork.
  5. Spoon into the prepared trays and bake for 15-20 minutes or until cooked and golden.

Traditional Cooking Method
