These Zucchini Slice Bites are packed with vegetables and a whole lot of goodness. I must admit I was a little worried my kids wouldn’t eat them but they did! Tasty and full of goodness.
Tip: We used a mix of tasty and parmesan cheese.

Ingredients
- 2 zucchini
- 2 carrot
- 1 brown onion
- 250 g ham or nitrate-free bacon
- 3 egg
- 2 tbsp. vegetable stock paste
- 30 g olive oil
- 1 c plain flour
- 50 g cheese
Instructions
Thermal Cooking Method
- Preheat oven to 180ºC and grease a mini muffin tray with some olive oil.
- Add zucchinis, carrots, and onions into the mixing jug and chop for 3 seconds/speed 5. Set aside in a large bowl.
- Grate the cheese for 4 seconds/speed 5 and add this to the large bowl.
- Dice the ham (or bacon) and add to the large bowl along with the rest of the ingredients. Mix well with a fork.
- Spoon into the prepared trays and bake for 15-20 minutes or until cooked and golden.
Traditional Cooking Method
