Mexican pulled pork was so super easy, it was crazy! We made our homemade wraps and it fed 6 adults, 5 kids and a toddler, we even had leftovers which I’ll pop in the freezer for another night or eat in sandwiches the next day.
We marinated the pork in the Mexican spice mix for 24 hrs, but if you don’t have time to do that just marinate for as long as you can.

Ingredients
- 1 large pulled pork (skinless shoulder)
- 2 brown onion
- 3 tbsp. mexican spice mix
- 2 tbsp. rapadura sugar
Instructions
- Rub the mexican spice mix all over the pork and place in the fridge (covered) overnight to marinate.
- In the morning, place the pork into the slow-cooker, add the sliced onion and sprinkle with sugar.
- Cook on low for 8 hours (no need to add water).
- Once cooked, pull the pork apart using 2 forks OR place roughly chopped bits into your thermal appliance and shred for 1-2 seconds/speed 4.reverse.
- Place back into your slow cooker to keep warm and mix through all the juices.
- Serve with your favourite salads, wraps and additive-free mayonnaise.
Thought I would make this tonight after seeing your burrito bowl post. Soooo yummy!! Only thing I found was maybe a little dry for my taste? Any suggestions without having to add water which might dilute flavour? I’m sure this recipe will be called upon frequently. Even your Mexican spice mix a winner also!!
