These lemon bliss balls are so good you’ll want to make them over and over. Once they are set in the fridge they will go like a condensed milk ball – but these ones are much healthier. Being nut-free these are great for lunchboxes too.
Tip: If you’d like to make these gluten-free use Quinoa Flakes in replace of the oats.

Ingredients
- 150 g oats
- 80 g lemon juice
- 170 g pitted medjool dates
- 2 tsp. vanilla bean paste
- 1 tbsp. coconut oil
- 80 g desiccated coconut
- 1/4 c desiccated coconut
Instructions
Thermal Cooking Method
- Place everything into the thermal mixing jug and blitz for 20 seconds/speed 9.
- Roll into balls and coat in extra coconut.
- Store in the fridge or freezer.
Traditional Cooking Method
- Place everything into a food processor or high-speend blender and blitz on high until well combined.
- Roll into balls and coat in extra coconut.

These are so easy to whip up when you need healthy snacks and don’t feel like spending hours in the kitchen or putting the oven on. I often use lemon essential oil instead of fresh lemon and just add a tablespoon of water as I always have it on hand – works a treat! Delicious!

Do normal dates work?
Yes, they might be a little bit drier, so you may need extra water or coconut oil, but otherwise, they will be fine

You could try GF oats, or switch to quinoa flakes instead.
