Ingredients

  • 450 g bread crusts
  • 150 g walnuts
  • 100 g organic dried cranberries
  • 80 g salted butter
  • 2 tbsp. fresh thyme or 2 tsp dried
  • 2 tsp. onion powder
  • Salt & pepper to taste

Instructions

Thermal Cooking Method

  1. Add bread crusts into the jug and blend for 10 seconds/speed 5 or until they resemble breadcrumbs.
  2. Add walnuts and chop coarsely, 5 seconds/speed 5.
  3. Add all remaining ingredients and on reverse, blend together, 30 seconds/speed 3.
  4. Grab a bit with your hand, it should clump together. If not, add a little more butter and continue to mix.
  5. Stuff the turkey and cook as per packet instructions (this will differ depending on the size of the turkey). TIP: Refer to the ‘Sage Buttered Roast Turkey’ for a full turkey recipe.
  6. Freeze any leftovers, this is perfect in chickens too!

Traditional Cooking Method

  1. Place bread crusts into a food processor and turbo/pulse until it resembles breadcrumbs. Alternatively you can use pre-purchased breadcrumbs but it won’t be as nice.
  2. Coarsely dice walnuts using a knife, then add all remaining ingredients into the food processor. Slowly process until the mixture comes together. TIP: If your food processor is going to chop this mixture, stir it by hand.
  3. Once mixed, grab a bit with your hand, it should clump together. If not, add a little more butter and continue to mix.
  4. Stuff the turkey and cook as per packet instructions (this will differ depending on the size of the turkey). TIP: Refer to the ‘Sage Buttered Roast Turkey’ for a full turkey recipe.
