WOW – am I allowed to say one word?  This recipe is totally WOW, its YUM!  You will need some hokey pokey bits for this recipe (Hopper’s brand) but we’ve got a few recipes on our site for them now, so you will have no trouble using them up.

Ingredients

  • 500 mL full fat pouring cream
  • 50 g raw sugar
  • 1 tsp. vanilla bean paste
  • 2 egg yolks
  • 1/2 container of Hopper Hokey Pokey honeycomb nuggets (choc free)
  • 1/2 container of Hopper Hokey Pokey honeycomb nuggets (choc coated)

Instructions

  1. Start by adding cream, sugar, vanilla and egg yolks into mixing jug and cook for 6 minutes/temp 90ºC/speed 4.
  2. Put this mixture into a flat container (with a lid) and put in freezer for about 4 hours.
  3. After 4 hours, take the mixture and put it back into your mixing jug. Mix for 20 seconds/speed 9.
  4. Tip this back into your container and add honeycomb (both types).
  5. Mix this through with a spoon.
  6. Freeze for another 4-6 hours or until set.
