Ingredients
- 125 g soft butter
- 80 g raw sugar
- 1 tbsp. milk
- 1 tbsp. golden syrup
- 240 g self raising flour
- 50 g hokey pokey bits
- 50 g choc chips
Instructions
- Preheat your oven 160ºC and line two flat baking trays with baking paper or silicon mats.
- If your butter is straight out of the fridge then soften by placing in your mixing jug and mix for 30 seconds/37ºC/speed 3. If your butter is already soft add it directly to your jug.
- Add sugar to butter and mix 10 seconds/speed 3, scrape sides and repeat.
- Add milk and golden syrup and mix another 10 seconds/speed 3.
- Now add the flour and mix 10 seconds/speed 3. Don't worry if it's not all mixed in just yet.
- Add the hokey pokey bits and choc chips and mix on reverse 5 seconds/speed 2. If there is any flour not mixed in, then just use your spatula to mix the rest by hand.
- Roll into small balls, flatten slightly and place on your oven trays.
- Bake in oven for approx. 10-12 minutes until slightly golden. Allow to cool on trays for a few minutes before moving to a wire rack to cool completely.
The kids love these…. they never last long in our house.
