Wait until you try this herb crusted salmon, seriously, just wait! All you need is a blender or Thermomix, either one will work well for the crumb, then if you’re lucky enough to have a Solidteknics frying pan you’ll be able to fry the salmon and finish it off in the oven, all in one pan.
Today we’re going to make our own breadcrumbs. They are so much better than the store-bought versions. Have you ever read the ingredients listing on the pack of store-bought breadcrumbs? Just think preservatives and additives and a whole lot of unnecessary things our bodies just don’t need!
Generally, when I make a loaf of bread it consists of wheat flour, water, yeast, olive oil, salt – so why does all this extra stuff need to be in our food when breadcrumbs are so easy to make yourself?

Ingredients
- 4 slices of frozen bread
- 1 large handful of fresh parsley
- 2 sprigs of fresh dill
- 30 g parmesan cheese
- 2 tbsp. butter
- 4 salmon fillets (skin on)
- 2 tbsp. olive oil
Instructions
Thermal Cooking Method
- Preheat oven 180ºC.
- Add bread to mixing jug and blitz for 10 seconds/speed 7.
- Add herbs, cheese and butter and blitz on speed 7 until everything is chopped and the mix is holding together (approx. 10 seconds).
- Press herb crust onto the non-skin side of each bit of salmon, then heat oil in a frying pan to medium heat.
- Once the oil is ready, add salmon - skin side down. Cook until the skin is crisp, and about 1cm of the fish is cooked.
- Place fish into the oven and cook until the herb crust is crunchy and golden on top. Will take approx. 15 minutes.
Traditional Cooking Method
- Preheat oven 180ºC.
- In a food processor, blitz bread until it is nice and fine.
- Add herbs, cheese and butter and blitz until everything is chopped well (it should hold together when pressed).
- Press herb crust onto the non-skin side of each bit of salmon, then heat oil in a frying pan to medium heat.
- Once the oil is ready, add salmon - skin side down. Cook until the skin is crisp, and about 1cm of the fish is cooked.
- Place fish into the oven and cook until the herb crust is crunchy and golden on top. Will take approx. 15 minutes.
