Ingredients
- 100 g mixed grains/seeds
- 50 g boiling water
- 280 g water
- 1 1/2 tsp. sugar
- 2 tsp. dried instant yeast
- 470 g white bakers flour
- 1 1/2 tsp. salt
- 1 1/2 tsp. bread improver (you can source a natural bread improver, or use ACV if you wish)
- 1 tbsp. oil
Instructions
- Add mixed grains/seeds & boiling water to a small bowl & set aside for half an hour
- Add all other ingredients to your thermo bowl in order. Combine 15 seconds, speed 3
- Now add the presoaked mixed grain/seed mixture to the bowl & knead 6 minutes dough function
- Transfer dough to a thermomat or oiled bowl & cover with a tea-towel. Let this sit & rest for 15 minutes before working with the dough
- Turn dough out onto a thermomat or oiled/floured bench & punch out any gasses that may have formed
- Shape dough & place into your JUMBO 900G BREAD TIN
- Place your tin in a nice warm moist area to prove until it reaches the top of your 900g tin. If you are proving in a dry heat please spray your dough with water & cover your tin or the dough will dry out
- Preheat oven to 180* fan forced
- Once grown to the desired size bake for 30 minutes, or until golden brown. Take out of tin immediately & place on cooling rack

Hi Bec, yes it can be made with a stand mixer if you have a dough attachment for it. We are not aware of an adapted recipe for that size tin, however. We do have other bread recipes on our website which you can check out though.
Hi..just querying the 15mins rest time..that seems awfully short to prove..?

This is just to let the dough rest for 15 mins before working with it as you are placing it in the bread tin and letting it rise later in the method.

I’ve been making this recipe with seeds no grains, so I haven’t been soaking seeds. Should I add extra 50 gr water to the mix. I’m wondering if that could be why it is very crunchy and brittle when toasted from the freezer. Thanks, Judy
Yes, pre-soaking them softens them so they’re not as crunchy.
Just wondering if you have a preferred additive free bakers flour brand you use?
They should only have wheat flour and possibly added vitamins and preferable unbleached.
