Ingredients

  • baking paper
  • 6 firm white fish, boned (Pink Ling or Trevalla)
  • 2 lemon
  • veggies of choice (carrots, spring onions, zucchini, tomato, capsicum etc)
  • 1 sprinkle with fresh (or dried) dill
  • 1/2 tsp. butter per fish parcel
  • salt and pepper

Instructions

Thermal Cooking Method

  1. Cut out large squares of baking paper, so you have equal numbers of paper and fish.
  2. Lay each piece of fish in the middle of the baking paper.
  3. Finely slice your veggies of choice and add all the fillings to the top of the fish. Also add a couple of slices of lemon.
  4. Fold in the edges of the paper and place inside the steaming tray.
  5. Cook for 15-20 minutes/steaming temp/speed 1 (note - cooking time will vary depending on how thick each bit of fish is. Cook longer if needed.
  6. Serve with salad of choice and a drizzle of fresh lemon and enjoy

Traditional Cooking Method

  1. Heat the oven to 180ºC.
  2. Cut out large squares of baking paper, so you have equal numbers of paper and fish.
  3. Lay each piece of fish in the middle of the baking paper.
