Scrolls are a great sandwich alternative and great for lunchboxes.

We’ve varied the classic Vegemite and cheese scrolls to use EveryMite instead.  Ok, don’t shoot the messenger, but Vegemite is really not great from an additive and preservative perspective (MSG, colours and preservatives – no thanks!).  So using EveryMite is a great alternative that takes this to the next level, packed with all sorts of yummy and nutritious goodness!

TIP: As an alternative to just bakers flour, you can use 320g spelt flour and 200g bakers flour.

Ingredients

  • 2 tsp. yeast
  • 320 g water
  • 25 g extra virgin olive oil
  • 500 g bakers flour
  • 1 tsp. salt
  • 1 tbsp. chia seeds
  • 3 tbsp. EveryMite
  • 150 g freshly grated cheese

Instructions

Thermal Cooking Method

  1. Place yeast and water into your mixing jug and mix 1 minute/37ºC/speed 2.
  2. Add all other bread ingredients and knead for 5 minutes. Turn out dough into a lightly floured bowl, cover with a tea towel and allow to rise for approx. 30 minutes somewhere warm. Your dough should double in size.
  3. Now it's time to preheat your oven to 190°C and line a flat biscuit tray with some baking paper or a silicone mat.
  4. Knock down dough, roll into a ball then break in half. As best you can, on a slightly floured surface roll out each piece into a rectangle shape until thin (approx. 1/2cm).
  5. Spread each bit of dough with EveryMite. Then sprinkle cheese evenly over the dough.
  6. Roll up into a scroll shape and cut into 2cm strips.
  7. Place individual scrolls onto your lined baking tray and bake in oven until golden. Approx. 15 minutes.

Traditional Cooking Method

  1. Place yeast and warm water into a bowl.
  2. Add all other bread ingredients to bowl and mix well together until it becomes a ball (may need to add a bit more flour).
  3. Knead on a well floured bench for 5 minutes. Do not skip past this step! And place dough back into bowl.
  4. Once that has finished, place the dough into an oiled bowl and cover with a clean towel. Let it sit in a warm place until it has doubled in size.
  5. Now it's time to preheat your oven to 190°C and line a flat biscuit tray with some baking paper or a silicone mat.
  6. Knock down dough, roll into a ball then break in half. As best you can, on a slightly floured surface roll out each piece into a rectangle shape until thin (approx. 1/2cm).
