Beetroot is an amazing source of energy. So, a slice of this and you will fix that 3pm slump. It freezes well and is totally refined sugar free (unless you ice it with our chocolate icing). You can leave this icing off and it will still be delicious.

Ingredients
- 95 g dates
- 130 g coconut oil
- 50 g coconut flour
- 100 g self-raising flour (or spelt)
- 1 tbsp. cacao
- 2 tsp. vanilla bean paste
- 4 tsp. beetroot powder
- 50 g rolled oats
- 2 egg
Instructions
Thermal Cooking Method
- Pre-heat oven to 160°C and line a slice tin with baking paper.
- Blitz dates in your mixing jug 10 seconds/speed 9. Scrape down sides and repeat if needed (you want them nice and fine).
- Add everything else and mix 10 seconds/speed 4. Scrape down sides and repeat.
- Put in baking tray and bake approx. 12-15 minutes. (Don't overcook as it will become too dry).
- I iced mine with a basic chocolate icing (recipe link above), but this is optional. Note - If this is iced it will no longer be refined sugar free.
