Dippy eggs are one of our favourite Friday night go to meals – can’t be bothered cooking – it needs to be easy meals. Kids love ‘dippy eggs.’

Serve it with some sweet potato fries, or even smashed avo on toast, or just with plain old toast (just try and get bread that is additive free, like a yummy sourdough).  Remember to use real butter over margarine and you will have a perfect additive free dinner or perhaps breakfast.

The trick is to have the water boiling before putting in the eggs, then only cook for 4.5 minutes based on cooking 4 large size eggs. This will give you the perfect runny eggs so cut the top off quickly before it cooks more in its own heat.

Ingredients

  • sourdough and sweet potato chips
  • spritz of olive oil
  • 1 1/2 L water
  • 4 egg

Instructions

Thermal Cooking Method

  1. If making sweet potato chips, then now is the time to do this. Preheat oven to 180ºC, peel and cut sweet potato chip size fingers. Spritz with olive oil and cook until desired texture (approx. 20 - 30 minutes).
  2. Add water to mixing jug and insert simmering basket. Cook this on steaming temp (the hottest your machine will go) until the water comes to a boil (approx. 5 minutes/speed 1).
  3. Once at the boil, take lid off. Carefully with a spoon, place eggs into the water.
  4. If making sourdough toast, you need to do this now. Also, cut into finger size pieces.
  5. Cook now for 4.5 minutes/steaming temp/speed 1.
  6. Place cooked eggs into a holder and cut the top off straight away.
  7. Cooking times are based on 4 large size eggs and may differ with more or less eggs.

Traditional Cooking Method

  3. Once at the boil, carefully with a spoon, place eggs into the water.
  4. If making sourdough toast, you need to do this now. Also, cut into finger size pieces.
  5. Cook now for 4.5 minutes with water simmering.
  6. Place cooked eggs into a holder and cut the top off straight away.
  7. Cooking times are based on 4 large size eggs and may differ with more or less eggs.
