It’s pretty easy to whip up a coleslaw in the Thermomix, but to be honest, we actually like to do this the old fashioned way.  We prefer strings of cabbage rather than diced bits, but that’s just us.  If you want to make your life quicker and easier, add your cabbage to your Thermo Jug and blitz for approx. 1-2 secs on speed 5 until you get the consistency you like.

BUT, if you want to do it our way, then please keep reading and follow the method below.

We made our Mum’s mayo for this recipe simply because the stuff in the supermarket is often filled with preservatives!

We hope you enjoy this simple salad.

We would absolutely love you to leave us a comment below and let everyone know what you think. It’s comments like this that make our day, and help us improve a recipe if we need to. We look forward to reading what you think!

Mum's Mayo Ingredients

  • 1 tin of condensed milk
  • 1/2 tsp. Keen's mustard powder
  • 1/2 tsp. Keen's curry powder
  • 70 g white vinegar or apple cider vinegar (with the mother)

Coleslaw Ingredients

  • 1/4 green cabbage
  • 1/4 purple cabbage
  • 2 spring onions
  • 2 carrots
  • 1 tbsp. seeded mustard
  • Pinch of salt
  • Juice of half a lemon

Thermal Cooking Method

  1. First off let's make the mayo.
  2. Insert butterfly into your thermie jug.
  3. Put all ingredients into the thermie jug and mix for 20 secs/speed 3.
  4. Store in a jar in the fridge. It will last a couple of months. Once it sets in the fridge, it will go thick so when you're ready to use it, mix it with a little milk to thin it down if you wish.
  5. Now it's time to make the coleslaw.
  6. Thinly slice your cabbages and spring onions.
  7. Grate your carrot and mix this together.
  8. Mix together in a separate bowl your mayo, mustard, salt and lemon juice.
  9. When you're ready to serve, pour this over your salad, mix through, and serve straight away.
