It’s pretty easy to whip up a coleslaw in the Thermomix, but to be honest, we actually like to do this the old fashioned way.  We prefer strings of cabbage rather than diced bits, but that’s just us.  If you want to make your life quicker and easier, add your cabbage to your mixing jug and blitz for approx. 1-2 secs on speed 5 until you get the consistency you like.

BUT, if you want to do it our way, then please keep reading and follow the method below.

We made our Mum’s mayo for this recipe simply because the stuff in the supermarket is often filled with preservatives and mum’s mayo is wicked!

When purchasing apple cider vinegar, buy one containing the ‘mother.’ The mother consists of dozens of strains of good bacteria, which we often refer to as probiotics.  These help keep your digestive system running smoothly, so that you can get the most out of the food that you consume. Probiotics are also great for the immune system.

Ingredients

Mum's Mayo Ingredients

  • 1 tin of condensed milk
  • 1/2 tsp. keen's mustard powder
  • 1/2 tsp. keen's curry powder
  • 70 g white vinegar or apple cider vinegar

Coleslaw Ingredients

  • 1/4 green cabbage
  • 1/4 purple cabbage
  • 2 spring onions
  • 2 carrot
  • 1 tbsp. seeded mustard
  • pinch salt
  • 1 juice of half a lemon

Instructions

Thermal Cooking Method

  1. To make the mayo, insert butterfly into your mixing jug.
  2. Put all ingredients into the mixing jug and mix for 20 seconds/speed 3.
  3. Store in a jar in the fridge. It will last a couple of months. Once it sets in the fridge, it will go thick so when you're ready to use it, mix it with a little milk to thin it down if you wish.
  4. To make the coleslaw, thinly slice the cabbages and spring onions.
  5. Grate the carrot and mix this together.
  6. Mix together in a separate bowl your mayo, mustard, salt and lemon juice.
  7. When you're ready to serve, pour this over your salad, mix through, and serve straight away.

Traditional Cooking Method

  1. First to make the mayo, add all the mayo ingredients to a jar and shake shake shake!
  2. To make the coleslaw, thinly slice the cabbages and spring onions.
  3. Grate the carrot and mix this together.
  4. Mix together in a separate bowl your mayo, mustard, salt and lemon juice.
  5. When you're ready to serve, pour this over your salad, mix through, and serve straight away.
