Our mum would make chow mein all the time growing up as kids. It’s super easy, budget-friendly and a really old fashion dish but I hated it!!  And truth be told, I still do…

However, my husband and kids love it! My daughter especially hoovers down a full bowl and it’s great considering it’s so packed with veggies, bone broth powder (if you’ve got it), and good lean meat.

The traditional dish has oyster sauce, but this is really hard to find preservative-free, so I’ve come up with a dish that tastes great without it.

Ingredients

  • 1 brown onion
  • 2 garlic clove
  • 1 L zucchini
  • 2 carrot
  • 1 red capsicum
  • 1/4 white cabbage
  • 2 tbsp. olive oil
  • 1 kg lean mince
  • 1 c chicken broth
  • 2 tbsp. worcestershire sauce
  • 1 tbsp. fish sauce
  • 2 tbsp. tamari or soy sauce
  • 1/4 c bbq sauce
  • 1/2 c frozen peas
  • 1/2 c frozen corn
  • 1 packet of rice noodles

Instructions

Thermal Cooking Method

  1. Peel onion and quarter. Place onion, peeled garlic, roughly cut zucchini, carrots, capsicum(de-seeded) and cabbage into your mixing jug and blitz for 5 seconds/speed 6.
  2. Heat olive oil in a large frying pan over medium-high heat. Once hot, add the veggies and cook for 5 minutes.
  3. Add mince and brown off.
  4. Reduce heat to medium-low and add everything else (except noodles). Cook for at least 20 - 30 minutes. Allow the liquid to thicken and reduce by cooking it slowly.
  5. Cook noodles as per packet instructions and mix through. It's now ready to serve.

Traditional Cooking Method
