Do you want a chocolate biscuit that is a little different from your average chocolate biscuit but of course, it has to be yummy for the kids. The almond meal in these gives them a lovely texture and they get the big thumbs up from the kids.

Ingredients
- 250 g butter
- 100 g rapadura sugar
- 2 eggs
- 1 tsp. vanilla bean paste
- 100 g almond meal
- 350 g plain spelt flour
- 2 tsp. baking powder
- 200 g dark choc chips
- 2 tbsp. cacao powder
Instructions
Thermal Cooking Method
- Preheat oven to 180ºC and line two baking trays with baking paper.
- Place all ingredients into mixing jug and mix on speed 4/reverse/10 seconds. Scrape down sides and repeat.
- Roll dough into balls and bake in the oven for about 12 minutes or until lightly golden.
- Let them cool on a wire rack and ENJOY!
Traditional Cooking Method
- Preheat oven to 180ºC and line two baking trays with baking paper.
- Using electric beaters whip butter and sugar until light and fluffy. Then mix through vanilla and eggs one at a time.
- Stir through all remaining ingredients until incorporated.
- Roll dough into balls and bake in the oven for about 12 minutes or until lightly golden.
- Let them cool on a wire rack and ENJOY!

My son (and I) love these but I’ve just realised I’ve been sending them to school and they have almond meal in them which is no good for school as no nut policy. Is there something else I can replace that almond meal with?

You could use something like wheat flour or coconut flour as an alternative.
