These chicken meatballs with some spice are super easy and are a massive hit in both our households. They are great for entertaining and perfect if you need to take a plate to your next dinner party. Simply pop them in the oven on arrival to reheat.

Ingredients
- 500 g chicken mince
- 1 egg
- 1/2 c breadcrumbs (gluten-free works well)
- 1 tbsp. fish sauce
- 1 tbsp. red curry paste
- 4 shallots
- 1 grinding of black pepper
- 2 tbsp. olive oil
Instructions
Thermal Cooking Method
- Finely slice shallots and add these, along with everything else to the mixing jug. Stir together for 10 seconds/speed 5/reverse - you may need to use the thermal spatula through the hole of the lid to move the mixture around.
- Roll walnut-size balls ready for cooking.
- Heat oil of choice over med-high heat and add meatballs cooking each side well. Drain on paper towel and serve with a toothpick.
