These cheesy ham potatoes make such a quick and easy meal that we bet the whole family will enjoy.  Seriously, I doubt there’ll be any complaints!  The filling does make a lot so if you’ve got a crowd this makes a really affordable dish, and it’s filling.  With any leftovers, keep them in the fridge for up to 3 days, or freeze it.  When you defrost the mixture, to reheat heat add it to a saucepan and heat slowly, and add some milk if it’s too thick.

Ingredients

  • 1 brown onion
  • 2 tbsp. cornflour
  • 2 tsp. seeded mustard
  • 1 tsp. paprika
  • 160 g tasty cheese
  • 60 g parmesan cheese
  • 250 g cream cheese
  • 120 g mozzarella cheese
  • 200 g rashers nitrate-free bacon
  • 1 tbsp. butter
  • 2 garlic clove
  • 8 potato

Instructions

Thermal Cooking Method

  1. Prick the potatoes with a fork approx. 8 times all around the potato. Cook these on high in the microwave for approx. 5-8 minutes until cooked or wrap them in baking paper, then foil and cook in oven for approx. 45-60 minutes on 200ºC until cooked through. To check if they are cooked insert a skewer, it should be tender.
  2. Peel the onion and chop it into four. Add onion and garlic to mixing jug and chop for 3 seconds/speed 7.
  3. Add butter and bacon or ham and cook for 3 minutes/100ºC/speed 1/reverse.
  4. Add all other ingredients and cook for 15 mins/80ºC/speed 2/reverse.
  5. Once cooked, remove the lid and let it sit for 5 minutes, it will thicken while standing.
  6. Cut cooked potatoes by slicing a deep cross in the top. Squeeze the bottom of the potato to pop the cross open, or open the cut with two forks. Pour cheesy mixture over the top of the potato and serve.

Traditional Cooking Method

  1. Prick the potatoes with a fork approx. 8 times all around the potato. Cook these on high in the microwave for approx. 5-8 minutes until cooked or wrap them in baking paper, then foil and cook in oven for approx. 45-60 minutes on 200ºC until cooked through. To check if they are cooked insert a skewer, it should be tender.
  2. Finely dice the onion, nitrate-free bacon or ham, and garlic. Add butter to a pan, heat until medium-hot and cook the mixture until onion is soft and pale and bacon is cooked through. Sit aside.
  3. Turn the heat down to medium and add all remaining ingredients. Stir constantly until cheeses have melted and start to simmer. Turn the heat off, add back in the onion/bacon mixture and stir through. Allow to rest for a few minutes as it will thicken upon standing.
  4. Cut cooked potatoes by slicing a deep cross in the top. Squeeze the bottom of the potato to pop the cross open, or open the cut with two forks. Pour cheesy mixture over the top of the potato and serve.
