Ingredients
- 1/2 tbsp. olive oil
- 3 chicken breast or 4-6 chicken thighs
- 3 spring onions
- 1 packet cherry tomatoes
- 1/2 c white wine
- 1/2 c cream or coconut cream
- 1/4 c pesto
- 1 packet of pasta
Instructions
- Preheat a frying pan over medium-high heat. Dice chicken and finely slice spring onions. Add olive oil to a pan and cook until browned all over.
- Add pesto and tomatoes and cook for one minute stirring through.
- Reduce the heat to a slow simmer, add white wine and simmer until the sauce reduces slightly, approx 5 minutes. While the sauce is reducing cook the pasta as per packet instructions.
- Add cream and simmer slowly for 10 minutes allowing the sauce to thicken and reduce further.
- Serve with cooked pasta or boiled/steamed vegetables.
