To make this recipe gluten-free, simply use gluten-free pasta – like I did.  If you are purchasing pesto remember to use our App so you can find an additive-free one.

Ingredients

  • 1/2 tbsp. olive oil
  • 3 chicken breast or 4-6 chicken thighs
  • 3 spring onions
  • 1 packet cherry tomatoes
  • 1/2 c white wine
  • 1/2 c cream or coconut cream
  • 1/4 c pesto
  • 1 packet of pasta

Instructions

  1. Preheat a frying pan over medium-high heat. Dice chicken and finely slice spring onions. Add olive oil to a pan and cook until browned all over.
  2. Add pesto and tomatoes and cook for one minute stirring through.
  3. Reduce the heat to a slow simmer, add white wine and simmer until the sauce reduces slightly, approx 5 minutes. While the sauce is reducing cook the pasta as per packet instructions.
  4. Add cream and simmer slowly for 10 minutes allowing the sauce to thicken and reduce further.
  5. Serve with cooked pasta or boiled/steamed vegetables.
